Ghee

So a couple of months ago I had never heard of Ghee. Now I use it almost daily. Dieter can't have dairy products, but he can have Ghee. It is clarified butter used for cooking.

1 lb unsalted organic butter (At the moment I am buying salted butter. I don't like the ingredients in the unsalted butter).

-Put the butter in a small glass baking dish (It works best for me to use a couple of wide mouth pint jars). Heat the butter in the oven at 225° or a lower temperature as your oven will allow.
-Continue until the butter fully separates and a clear golden liquid is on top. The solids will fall the bottom. This may take about an hour or slightly longer depending on oven temperature.
-Remove from heat while the liquid is a clear gold color.
-Spoon out the golden liquid (ghee). If you used salted butter, remove the salt sitting on top with a spoon or fork. Pour ghee into a glass storage container. Ghee will become solid when refrigerated, but you don't need to refrigerate it.
-Ghee will keep for many months.
