Quinoa Burgers

Quinoa is a good source of manganese, magnesium, iron, copper and phosphorus. It comes from South America and has a nutty flavor. I have found it pretty reasonably priced at Costco. To make this gluten free, use 2 cups rice flour instead of whole wheat flour and oats.

2 cups Quinoa, cooked (You can also use brown rice)
2 cups of your favorite kind of Beans, cooked
2 small Zucchini, grated
1 Onion, grated
1 cup Whole Wheat Flour
1 cup Rolled Oats
1/4 Olive oil
Favorite spices (I use my ranch dressing mix)

-Combine all the ingredients in a bowl and mix well.
-Mixture should be sticky. If it's dry add water. Add flour if mixture is runny.
-Try your mixture. If it tastes good then the finished result will be good. Add more seasonings if necessary.
-Shape into patties and fry on a skillet coated with light layer of olive oil.
-Serve on a bun with your favorite vegetables and condiments.
