Butternut Squash Fries


These are so yummy right out of the oven... you might have them all eaten before they make it to the table. :) Some of my fries got a little overdone, but they were still delicious.

1 Butternut Squash
4 Tbsp Coconut Oil (you can also use olive)
Sea Salt and Pepper

-Using a sharp knife, cut squash in half lengthwise.
-Cut in half again (lengthwise) and scoop out the seeds with a spoon.
-Peel off the skin.
-Cut each quarter in half lengthwise, and keep cutting until they are the size of fries.
-Put all the squash in a bowl and drizzle with oil. Sprinkle with salt and pepper.
-Lay the fries carefully on two cookie sheets; allowing for plenty of room around them.
-Bake at 400 degrees for 45 minutes. They are down when brown and barely crispy.

These sound so good! I love making fries out of different veggies ;) I'll be trying these out for sure!

Oh, kind of like sweet potato fries, looks yummy!
