Crockpot Beef Stew



I love recipes that use my crockpot! I didn't add any potatoes to this, but add them if you would like. This recipe is so hearty and I thought the mushrooms were a great addition.

1 lb Stew Meat, cubed
1-2 TBsp coconut oil, or oil of your choice
2 Onions
3-5 Carrots, sliced
2 Celery Stalks, sliced
2-3 Tomatoes, peeled and diced
3/4 cup Mushrooms, chopped
3 cloves Garlic, minced
1 Bay Leaf
1 tsp Thyme
1 tsp Salt
1/4 tsp Pepper
3 1/2 cups Beef or Chicken Broth (add more as needed)

-Brown meat in coconut oil.
-Add all ingredients to crock pot and mix well.
-Cover and cook on low for 8-10 hours or high 4-6 hours.
-Stir and remove the bay leaf before serving.
