How to Make Coconut Milk



I like the Thai Kitchen Coconut Milk but we can't have it on the GAPS diet because of the Guar Gum that is in it. So...it's really simple to make your own coconut milk.

1 cup unsweetened Coconut Flakes
4 cups Water

-Soak the coconut flakes in the water for 4 hours.
-Blend the mixture in a blender or food processor until smooth.
-Strain the mixture through a fine mesh sieve or use cheesecloth.
-The liquid is your coconut milk.
-You can dry the pulp to make coconut flour. Bake at 225 degrees until dry or dehydrate. Grind the dried coconut to make flour.
