Crockpot Beef Stew

I love recipes that use my crockpot! I didn't add any potatoes to this, but add them if you would like. This recipe is so hearty and I thought the mushrooms were a great addition.

1 lb Stew Meat, cubed
1-2 TBsp coconut oil, or oil of your choice
2 Onions
3-5 Carrots, sliced
2 Celery Stalks, sliced
2-3 Tomatoes, peeled and diced
3/4 cup Mushrooms, chopped
3 cloves Garlic, minced
1 Bay Leaf
1 tsp Thyme
1 tsp Salt
1/4 tsp Pepper
3 1/2 cups Beef or Chicken Broth (add more as needed)

-Brown meat in coconut oil.
-Add all ingredients to crock pot and mix well.
-Cover and cook on low for 8-10 hours or high 4-6 hours.
-Stir and remove the bay leaf before serving.

New Sponsor

I have a new sponsor I want you to meet, Emily from S.A.H.M i AM. She has alot of fun activities and projects on her blog. Drop in and say "Hello".

Well, I'm a native of the Pacific Northwest currently living in south Texas. I like all things natural and try to keep life as simple as possible. I love making things from scratch. I find it very satisfying although not always realistic. I'm not super crafty but I'd like to be. I'm constantly seeking balance and trying to be the best mother I can be...the blog is a little slice of my life: my thoughts, my projects, my joys and frustrations.

Coconut Lime Smoothie

We have smoothies regularly at our house. I thought this one was delicious! I have also made this smoothie with milk kefir and we still really enjoyed it!

1 Lime, peeled
1 Orange, peeled
1-2 leaves of Kale
1/4-1/2 cup Coconut Milk
2 ripe Bananas, frozen
Honey to taste
1/2-1 tray Ice Cubes
Enough water to make the blades turn

-Blend until well combined

Someday...Monday

Happy Monday! Did you have a good weekend? Did you watch the Super Bowl? I am going to admit that I did not. I didn't even know who was playing in it (is that terrible?)

Anyway, I found this table I want to make... I like to think I am crafty and someday I really will be :) Kimball has all the tools to cut out the wood, but I am terrified I will cut off my thumb. Honestly, I often cut myself with the kitchen knife. But, I do really want to make this. I think it is so cute!

Life Lately

Happy Friday everyone! Here's what is happening around my house...

Kimball and I are really terrible. Our children would gladly stay up until 11:00 every night (and sometimes they do). We will take a late night milk run to try to get them asleep in the car. It never works, you would think we would stop trying...

I actually got Dieter on camera. He turns his head every time I take a picture.

I ALWAYS have laundry to do! It's endless...but it helps when Samantha plays peek-a-boo with me while I'm folding laundry.

Have a Fabulous Weekend!!

Homemade Mayonnaise

This is so thick! The taste is refreshing next to store bought Mayo. It wouldn't take you very long to adjust and always prefer homemade mayo. If you want to Lacto-Ferment this, add whey. With it, it will last a few weeks. Without the whey, it will last days to a week. I think it's great that the whey is optional. I might not always have 7 hours for it to ferment.

3 Egg Yolks, preferably from pastured hens
1 TBsp Apple Cider Vinegar
1 tsp Sea Salt
2 tsp Raw Honey
1/2 cup Extra Virgin Olive Oil
1/2 cup Coconut Oil
1 TBsp Whey, optional

-Place egg yolks in bowl and blend for 1 minute. (I used a hand mixer. You could use a food processor)
-Add apple cider vinegar and blend for 30 more seconds.
-Add salt and honey and blend until mixed.
-While blending mixture, SLOWLY add in the oils. It will make your mayo creamy if it's SLOW.
-Mix in whey. Let mayo sit at room temperature for 7 hours before placing in the fridge.
-If you don't add whey, place in fridge after you blend in oils.
