Chocolate Coconut Fudge

I used peanut butter in this recipe. They were good, but I'm not a big fan of peanut butter (it was all I had on hand). I will make these again with almond butter. I know I will like them much better.

1 Tbsp Vanilla Extract
1/2 tsp Salt
1 cup nut or seed butter (peanut, almond, sunflower...)
1/4 cup (generous) Cocoa Powder
1 cup Shredded Coconut
1/4 cup (generous) Coconut oil, melted
1/4 cup Honey

-Mix together all ingredients.
-Pour mixture onto a piece of parchment paper on a cookie sheet. Spread out to about 1/4″ thick.
-Place fudge in freezer. Let set for about 30 minutes.
-Break into pieces and serve or put in container back in freezer until you are ready to serve.

Squash Cake

Here is a great cake if you have a gluten allergy. I really enjoyed it with whipped cream on top (the more the better).

6 Eggs
2 cups grated (packed tightly) Winter Squash
1/2 cup Honey
1/3 cup Butter, Ghee, or Coconut Oil
3 cups ground Almonds
3 Apples

-Grease your 9x13 baking dish and cover the bottom with apples, cored and cut into slices.
-Blend the rest of the ingredients in your blender and put the mixture on top of the apples.
-Smooth the top and bake at 325° F for 40-50 minutes.

The Original Sour "Candy"

I love sour things! I keep my dehydrated fruit in the freezer. I can easily pull something out for a quick snack.

-Peel and cut kiwi into 1/4 inch slices.
-Dehydrate on 115°F for 12 hours or until dry.

Someday...Monday

Hello, hello! How was your weekend? I had a new little nephew born over the weekend. So fun! Samantha is HUGE! Babies grow so fast don't they?

For today's Someday...Monday I found these adorable pillows! I am going to be making them this week. That means I am hauling the kiddos to JoAnn's. So fun and chaotic (Dieter tries to climb out of the cart).

A New Tie

Most of Dieter's pictures lately look like this.

We had to be very secretive when we took these pictures on Sunday.

He got a new tie. Isn't it cute?

White Bean Chicken Soup

Delicious! Add corn, tortilla chips, cheese, and sour cream to turn it into a taco soup. We left out the green chilies so Dieter would eat it.

1 lb chicken, cut up into small chunks
1 Tbsp Butter
1 cup chopped onion
4 cups Chicken Broth (more if needed)
2 cloves of Garlic, chopped finely
1 Tbsp Cumin
1/2 tsp Oregano
2 cups White Beans, cooked
1 or 2 chopped red, green or yellow bell peppers, or combination
1 can green chilies, drained
Salt to taste
Corn, optional
Cheese, optional
Tortilla Chips, optional

-Heat the butter in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender.
-Mix in the garlic, green chile peppers, cumin, oregano, and red peppers. Continue to cook and stir the mixture until tender, about 3 minutes.
-Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
-Remove the mixture from heat.
-Top with cheese and sour cream.
